Beschrijving van het maken van zeep
Uit een dertiende-eeuwse verhandeling door koning Al-Muzaffar Yusuf ibn ‘Umar ibn’ Ali ibn Rasul (1245-1294).
“Neem tweederde van alkali (al-qily) en een derde van niet-gebluste limoen (nura dhakar). Breek de limoen in kleine stukjes ter grootte van faufal of kastanje. Neem een mirkan (groot vat)van aardewerk en snijd een uitlaat (manzil) aan de onderkant en sluit deze uitlaat goed af met een doek. Neem stenen en breek ze in kleine stukjes, niet helemaal klein, en verpak ze in het midden van de mirkan. Plaats op de gebroken stenen een stuk khsaf(Khasaf, khsafa, van aan elkaar geweven palmbladeren vervaardigde mat). Gooi op de khasafa de alkali en de niet-gebluste kalk en giet daarop een hoeveelheid water gelijk aan vier of vijf keer het onderdompeling volume. De mirkan moet op een hoge positie worden geplaatst en plaats onder de uitlaat nog een lege mirkan zodat de vloeistof erin stroomt.
Als er geen hoge plaats is, graaf je een holte in de grond op een diepte gelijk aan die van de lege mirkan, en deze wordt in de holte neergelaten zodat het bevindt zich onder de uitlaat. Laat het een dag en een nacht staan en open de uitlaat op de tweede dag zodat het gefilterde water van al kali en limoen erin kan worden gegoten. Wanneer alle vloeistof is geleegd, keer terug en giet het boven de alkali en limoen en laat het een dag en een nacht staan. Open de uitlaat de volgende ochtend en leeg de hele heldere vloeistof. Wanneer de hele vloeistof ophoudt te stromen, verdeel het dan in twee helften. Leg de ene helft opzij. Giet [op de overgebleven helft] een gelijke hoeveelheid sesamolie (shiraj) en klop (roer) het mengsel krachtig en herhaaldelijk met een houten klopper gedurende een uur totdat het hard en dikker wordt. Laat het de rest van de dag staan en een nacht als je haast hebt, laat het anders twee of drie dagen staan als je geen haast hebt, want hoe langer het blijft, hoe beter het fermenteert. Laat het afkoelen en doe het in een koperen ketel en zet er een sterk vuur onder. Elke keer dat het dikker wordt, wordt het water verdikt met het scherpe water uit de ene helft die opzij werd gezet zoals hierboven vermeld. Je gaat door met het aanmaken van het vuur en het besproeien met het scherpe water totdat het korrelig wordt en rijpt. Blijf het kloppen (mixen) zodat het niet verbrandt. Leg het neer en giet het in een mirkan (een groot vat) en klop erop en geef het beetje bij beetje water, giet het dan weer in de ketel en zet het op het vuur, laat het een sterk vuur zijn, en wanneer het neigt droog te worden, geef het beetje bij beetje water met het scherpe water terwijl je roert, zodat het niet verbrandt. Ga zo door totdat het water op is en de zeep goed gaar is en de consistentie wordt zoals die van de schoenmakers lijm, ook wel ashras genoemd.
Maak een milban (mal) van hout, vergelijkbaar met de milban van bakstenen, maar dan groter. Spreid een kham-doek (grove katoenen doek) of een stuk khasf uit en plaats de milban (de mal) erover. Giet de zeep in de milban. Het doel van de milban (de mal) is om te voorkomen dat de zeep wegstroomt totdat deze dikker wordt. Laat het een nacht en een dag staan totdat het stolt. Snijd het vervolgens met een mes zoals gewoonlijk. Als je wilt dat de zeep geparfumeerd wordt, voeg er dan bij de laatste keer dat je voor het laatst kookt, parfums en saffraan aan en welke geuren je ook lekker vindt, giet het dan zoals hierboven vermeld, als God het wil”
