De (al)chemie van zeep.
Zeep is een oppervlakte-actieve stof; een stof die de oppervlaktespanning van een vloeistof kan verlagen. Door deze eigenschap dringen water en zeep makkelijker in textiel bijvoorbeeld.
Oppervlaktespanning is het natuurkundig verschijnsel dat het oppervlak van een vloeistof aan een vloeistof-gasovergang zich gedraagt als een veerkrachtige laag.Een oppervlakte-actieve of grensvlakactieve stof, ook wel tenside, detergent, tensio-actieve stof of surfactant (van surface active agent) genoemd, is een stof die de oppervlaktespanning van een vloeistof kan verlagen. Een vloeistof met verlaagde oppervlaktespanning kan gemakkelijker grote oppervlakken vormen. Dit heeft tot gevolg dat de vloeistof gemakkelijker schuim vormt. Door een beetje oppervlakte-actieve stof, bijvoorbeeld afwasmiddel toe te voegen aan water, kan men dit water gebruiken om bellen te blazen. Een meer praktische toepassing is in zeep, waar het wordt gebruikt om het water en de zeep makkelijker in de textiel te laten dringen. Oppervlakte-actieve stoffen zijn amfifiele stoffen, dat wil zeggen verbindingen met een hydrofobe en een hydrofiele groep; zij zijn daardoor zowel in polaire als in apolaire stoffen oplosbaar.
Aangezien polaire moleculen elkaar aantrekken, zullen de moleculen van de oppervlakte-actieve stof zich vooral aan de grensvlakken van de vloeistof bevinden. Als daar geen plaats meer is, vormen ze micellen. De concentratie van een oppervlakte-actieve stof waarbij deze micellen gaat vormen wordt de kritische micelconcentratie genoemd.Oppervlakte-actieve stoffen worden vaak gemaakt van plantaardige en dierlijke oliën en vetten of van aardolie. Chemisch gezien is zeep het zout van de vetzuren waaruit het ontstaat. Bij vele plantaardige vetzuren is de lengte van de koolstofketens vrij groot (14-26 koolstofatomen). De vetzuurrest is dus een lang molecuul met een polaire ionogene kop en een apolaire staart. Een dergelijk amfifiel molecuul heeft een bijzondere eigenschap: het kan zorgen dat water en olie een homogeen mengsel vormen. In een mengsel van water en olie zorgt zeep dat kleine druppeltjes olie blijven zweven in het water, doordat de apolaire staart van het molecuul in het vetdruppeltje binnendringt en de polaire kop in contact blijft met het water. Zo’n oliedruppeltje dat omgeven door zeep zweeft in water wordt een micel genoemd. Zo wordt dit vuil makkelijk verwijderd van textiel of huid.
Zeep breekt echter ook de natuurlijke, vettige beschermlaag van de huid af. Deze vetlaag wordt wel weer aangevuld door de talgklieren, maar in de tussentijd is de huid minder beschermd tegen invloeden van buitenaf. De huid is na reiniging tijdelijk gevoeliger voor irriterende stoffen en voelt droog aan.
Natuurlijke zeep heeft de ongewenste eigenschap dat het een neerslag vormt in combinatie met calciumionen. Daardoor wordt de reinigende werking van zeep ernstig verminderd wanneer het gebruikt wordt in combinatie met hard water. Het voordeel van natriumdodecylsulfaat is dat het geen neerslag vormt in combinatie met calciumionen, waardoor schoonmaakmiddelen op basis van natriumdodecylsulfaat ook bij hard water hun reinigende werking behouden.
